New Charlotte brewery to specialize in gluten-free beers

Charlotte’s brewery scene is booming, and new taprooms are opening throughout the city. Andrew Kalinoski, former head brewer at Sycamore Brewing, is bringing something new to the market. His new brewery, Armored Cow Brewing, plans to specialize in gluten-free beer using non-traditional grains like millet, buckwheat, malted rice and granola.

There are few options at breweries for people with gluten allergies or Celiac disease, which affects Kalinoski’s son and mother-in-law. Production is more expensive and time-consuming than regular craft-beer brewing.

Armored Cow plans to open this February at 8821 JW Clay Blvd. near UNCC.
